Matcha is calmer than it looks. A good bowl takes about two minutes and four steps.
How to make a bowl
- Sift two scoops of matcha into the bowl — one pass through fine mesh and the clumps disappear.
- Add 2–3 oz of water just off the boil (about 80°C).
- Whisk briskly in a “W” for 15–20 seconds, until a fine foam settles across the top.
- Pour, or drink it straight from the bowl. Add ice or milk if that's your morning.
Caring for your tools
Rinse the bowl by hand. Let the chasen dry prong-side-up on its stand — never in a drawer — so the bamboo keeps its shape. Keep matcha in a lidded tin, away from light, and use it within a few weeks of opening.
That's the whole ritual. Two quiet minutes, and it's yours.
