Matcha is calmer than it looks. A good bowl takes about two minutes and four steps.

How to make a bowl

  1. Sift two scoops of matcha into the bowl — one pass through fine mesh and the clumps disappear.
  2. Add 2–3 oz of water just off the boil (about 80°C).
  3. Whisk briskly in a “W” for 15–20 seconds, until a fine foam settles across the top.
  4. Pour, or drink it straight from the bowl. Add ice or milk if that's your morning.

Caring for your tools

Rinse the bowl by hand. Let the chasen dry prong-side-up on its stand — never in a drawer — so the bamboo keeps its shape. Keep matcha in a lidded tin, away from light, and use it within a few weeks of opening.

That's the whole ritual. Two quiet minutes, and it's yours.
